Overview
The Chef de Partie – Chinese is responsible for managing the Chinese kitchen section, preparing authentic Chinese dishes, maintaining food quality, and ensuring hygiene and safety standards as per hotel SOPs.
Key Responsibilities
Prepare and cook Chinese cuisine (Indo-Chinese / Pan-Asian as applicable)
Manage day-to-day operations of the Chinese section
Ensure consistency in taste, presentation, and portion control
Supervise and train commis and junior kitchen staff
Follow standard recipes and kitchen SOPs
Maintain cleanliness, hygiene, and food safety standards
Coordinate with other kitchen sections for smooth service
Monitor stock levels and minimize wastage
Ensure timely preparation for lunch, dinner, and special events
Skills & Requirements
Strong knowledge of Chinese cooking techniques, sauces, and ingredients
Ability to handle wok, sauces, and live kitchen operations
Good time management and teamwork skills
Ability to work under pressure during busy service hours
Qualification & Experience
Diploma or Degree in Hotel Management / Culinary Arts preferred
Minimum 2–4 years of experience in Chinese cuisine
Hotel or standalone restaurant experience preferred
